Mexican Corn Dip

If you’re looking for something creamy, a little zesty, and completely addictive—this is it. Our Mexican Corn Dip is one of those recipes that disappears fast, especially when paired with the right scoop.

Simple ingredients, big flavor, and just the right kick.

What You’ll Need

  • Canned Mexi-corn (drained)
  • Canned green chiles
  • Mayonnaise
  • Shredded cheese blend
  • Fresh jalapeño, finely diced

 

Before You Start

Drain, drain, drain.
Make sure your canned corn and green chiles are fully drained before mixing. Any extra liquid will water down the dip and leave you with a sloppy texture—and that’s not what we’re going for. We want creamy, scoopable perfection.

The Ingredients:

  • (2) 15.25 oz cans Mexican Corn, drained
  • (1) 4 oz can Diced Green Chilies, drained
  • 8 oz Mayonnaise
  • 4 oz Pepper Jack Cheese, finely shredded
  • 4 oz Colby Jack Cheese, finely shredded
  • 8 oz Cheddar Cheese, finely shredded
  • 1/2 Jalapeno, de-seeded & diced
  • Frito Scoops for dipping

Instructions

  • 1. Fully Drain all canned goods
  • 2. Hand shred cheese, or buy pre-shredded
  • 3. Add all ingredients to a mixing bowl and mix till fully combined
  • 4. Serve up with Fritos and enjoy!
