This soup starts with tender, flavorful Italian meatballs, browned to perfection before taking a gentle simmer in a rich, savory broth. Into the pot go carrots, potatoes, and spinach — a trio that brings sweetness, substance, and a touch of vibrant green.

Just before serving, we swirl in a splash of cream to round out the flavors, giving the broth a silky richness without making it heavy. It’s that final touch that turns a simple soup into a true comfort meal.

the ingredients

  • 1 pound Italian Meatballs, uncooked
  • 1 Yellow Onion, diced
  • 2 clove Garlic, minced
  • 2 TBSP Extra Virgin Olive Oil (EVOO)
  • 3 medium-large Carrots, chopped
  • 3 stalks Celery, chopped
  • 1 lb 8 oz Golden Potatoes, cubed
  • 5 oz bag of Baby Spinach
  • 5 pounds Chicken Broth
  • 2 oz Heavy Whipping Cream
  • 2 tsp. B&P Salt Pepper & Garlic (SPG)
  • 1 tsp. Paprika
  • Shredded Parmesan to top

Instructions

  • 1. In a dutch oven over medium heat sauté Italian Meatballs, onion and garlic in EVOO.
  • 2. While Meatballs are cooking, chop Carrots and Celery and add them to your dutch oven.
  • 3. Once Meatballs are browned, add in cubed Potatoes, seasoning and Chicken Broth and bring to a boil. Boil till potatoes and carrots are tender.
  • 4. Once all your vegetables are tender, reduce heat to let simmer and add in fresh Spinach leaves.
  • 5. Finish soup with Heavy Cream, seasoning to taste and top with shredded Parmesan Cheese.
