Cowboy Cookies: Crispy Edges, Chewy Centers & All the Good Stuff!

What We're Baking This October | Recipe 4 of 6

If there’s ever a cookie made for fall weekends and football season, it’s a Cowboy Cookie!

These cookies are loaded with all the good stuff — chocolate chips, butterscotch chips, rolled oats, and our not-so-secret ingredient, CORN FLAKES! That’s right, corn flakes. They add a little extra crunch that takes these cookies to a whole new level.

The result? A perfectly crispy exterior with a soft, chewy center and plenty of flavor in every bite. The combination of chocolate and butterscotch brings just the right amount of sweetness, while the oats and corn flakes give these cookies their wonderful texture.

And with football season in full swing, we can’t think of a better cookie to bring along for tailgating our Cowboys. GO POKES!

What Makes These Cowboy Cookies So Good?

The Secret Ingredient: Corn Flakes!

We’re big fans of adding a little unexpected something to a familiar recipe, and corn flakes are doing some serious work here.

They bring a light, crispy texture that pairs perfectly with the chewy oats and soft cookie center. It’s a simple addition, but one that makes these cookies stand out.

Chocolate + Butterscotch

Why choose one when you can have both? The chocolate chips bring that familiar richness, while the butterscotch chips add a warm, buttery sweetness that’s especially good this time of year.

Crispy Outside, Chewy Inside

This is exactly what we’re looking for in a Cowboy Cookie. A lightly crisp exterior with a soft, chewy center and plenty of texture from all those mix-ins.

B&P Tips & Tricks

Don’t Overmix Your Dough

Once your dry ingredients are added, mix just until combined. When folding in the oats, corn flakes, and chips, use a gentle hand to keep some of that wonderful corn flake texture intact.

Use a Cookie Scoop

We’re always reaching for a cookie scoop in the B&P kitchen. Evenly portioned dough means more consistent baking, and when you’re making cookies for a crowd, it makes the process so much easier.

Stock That Freezer!

You know how we feel about freezer cookies! Scoop your dough into individual portions, freeze until firm, and transfer to an airtight freezer-safe container or bag.

Now you’ve got homemade cookie dough ready for the next game day, unexpected company, or whenever a cookie sounds good.

For best quality, use frozen dough within about 3 months. Bake from frozen, allowing a little extra time as needed.

Watch Those Edges

For that crispy exterior and chewy center, pay attention to the edges of your cookies. Look for lightly golden, set edges while the centers still appear slightly soft. They’ll continue to firm up as they cool.

Where to Serve These Cowboy Cookies

A Cookie Worth Sharing

That’s what we love about these Cowboy Cookies. Nothing overly complicated, just a really good cookie loaded with ingredients that work so well together.

Chocolate, butterscotch, chewy oats, and that unexpected crunch from the corn flakes. They’re hearty, full of texture, and made for sharing.

Whether you’re packing them up for a tailgate, taking them to a fall gathering, or keeping a stash of dough in the freezer, these are cookies you’ll find yourself making again and again.
